Recipe Introduction
Lefse does not always have to be served with cinnamon and sugar. It can be used much like tortillas and served with just plain butter "lefse klenning". Served with savories such as lutefisk, meats, or ham and eggs. Good with berries or jelly also
List of Ingredients
7/8 C sour cream
1 tablespoon sugar
1 tablespoon golden syrup
1 teaspoon baking soda
wheat flour
barley flour (a small quantity)
Recipe
Mix together sour cream, sugar, and syrup. Mix the baking soda into a small quantity of sifted wheat flour, stir this into the cream mix, add a little barley flour . Then add wheat flour, but not too much. The dough must stay soft. Place a lid on the bowl and leave the dough in a cool
place for 1 - 2 hours.
Cut the dough in 2 - 4 parts. Roll out each part (with a rolling pin) into a round, rather thin shape.
Place the dough on a greased flat pan and bake it in the oven at 400 degrees F. until Light yellow color.
If the lefse swells while it is in the oven, puncture it with a fork or a needle. It is supposed to be flatPut the warm lefses on top of each other and wrap a piece of cloth around them. When they are cold, spread butter on them and sprinkle with sugar. If desired.
Fold each lefse over and cut it in wedges. (.
