    Get a side of pork with some meat attached; put salt, onion and bay leaf on and roll it together and tie with a string. Put a heavy weight on it, such as a cloth-covered brick. Make a strong brine, I cup sugar, onion and bay leaf. Cook all together and let it boil about 10 or 15 minutes. Add I cup vinegar in brine and let it get cold before putting pressed sylta into it.
