    5 pounds veal shank
    1 medium onion
    salt
    pepper
    1 bay leaf
    a few whole allspice

    Recipe



    Select a lean and meaty veal shank and cook in a small amount of water. Add sliced onion, bay leaf and seasonings. Cook slowly until tender. When cool put meat through food chopper. Strain stock and add enough to meat to make a soft mixture. season to taste, mix thoroughly and bring to a boil. Pour into a loaf pan and press by putting a weight on top and set in a cold place. Cut into slices for serving.
