1 pound chestnuts, peeled
Milk, boiling
sirup recipe;
2 C sugar
juice and grated rind of 1 lemon
juice and grated rind of 1 orange
4 whole cloves
1 stick cinnamon
1/4 tsp ground ginger
1/2 C raisins (opt)
1/2 C chopped nuts (opt)
Recipe
Boil the chestnuts in the milk for 20 minutes. Drain reserving the liquid. Add enough of the liquid to make 2 cups.
Or for dessert recipes;
Make the syrup. Simmer the sirup until slightly reduced. Fold enough into the chestnuts to make a puree.
