    Spiced Nuts With Dried Cranberries

    List of Ingredients




    1 C whole raw almonds
    1 C pecan halves
    1 C roasted pumpkin seeds
    1 C dried cranberries
    2 tsp cinnamon
    1/2 tsp ground chipotle or cayenne
    1 2 pound bag powdered sugar (divided)
    1/4 C spiced rum
    water if necessary

    Recipe



    Spray a cooky sheet with oil. Set aside.
    Mix nuts, seeds, Cranberries, cinnamon and chipotle pepper.
    In large pot over medium heat, place 4 C powdered sugar, immediatly add rum and stir well. Bring to a simmer and add nut mixture, stirring ocassionally. if nuts aren't completely coated add water. When coated, add remaining sugar and cook, stirring constantly, 5 minutes. Remove pan from heat and immediately empty mixture onto cookie sheet, spreading as thinly as possible. cool. Break apart and taste for flavoring, sprinkle with more spices to taste, if necessary. Store in tin.
