Recipe Introduction

You can still buy baker's ammonia (or hartshorn) on the internet, mostly from Europe and Scandinavia. 6-10 dollar for a couple of ounces (2011)

List of Ingredients

2 C unsalted butter
1 pound powdered sugar
3 tsp finely crushed bakers ammonia
4 C sifted flour
1 tsp vanilla
1/2 pound blanched almonds, ground


Recipe

Cream butter, add sugar and cream until well blended. Add finely crushed bakers ammonia to flour and work into butter mixture with vanilla and almonds. Mix very smooth. Bake at 300 degrees F. for 12 minutes. These cookies should not brown. The bakers ammonia, purchased at a drug store, will puff the cookies and make them hollow with a crunchy shell.
