    TAGLIARINI WITH CLAM SAUCE

    Serves 6. Note; to clean razor clams. Dip clam into boiling water and immerse immediately into cold water. This loosens the shell for easy removal of clam. With scissors, or very sharp knife, cut the clam open, removing all the black veins and brown "lungs".

    List of Ingredients

    1/2 C butter
    2 cloves garlic, pressed
    1/2 tsp salt
    2 1/2 C chopped razor clams
    1/2 C chopped parsley
    1 C sour cream
    12 oz. pkg. Tagliarini noodles (or vermicelli)

    Recipe

    In saucepan, saute garlic in butter. Clean clams, and chop to 1/4 inch pieces. To garlic and butter add clams and a couple of tablespoons clam nectar. Cook tagliarini according to package directions. Remove clam sauce from heat, stir in salt and sour cream. Heat through, being careful not to over heat; as it will separate. Stir in parsley. Top tagliarini with clam sauce. Serve with extra sour cream.
    Sprinkle with grated Parmigiano-Reggiano cheese if desired. Some times I like Feta on it.
