    10 oz meat
    1/2 C white flour
    1/2 C spelt flour
    4 T ghee
    1/2 C onion,chopped
    1T chopped fresh ginger
    2 tsp salt
    1/2 tsp ground black pepper
    1/2 tsp ground coriander seed
    1/4 tsp ground cardamon
    1/4 tsp ground cumin
    1/4 tsp ground cloves
    2 tsp ground sumac



    Recipe



    Mix the flour, cut in the ghee as for pie crust; continue until it is finely cut in. Sprinkle on about 4-5 T water and knead to a smooth dough.

    Mince the meat, combine it and all remaining ingredients until it is all cut finely together. Roll out the dough to about 12"x16", and cut into 2x2 inch pieces. Divide the filling evenly, putting about a teaspoon to a teaspoon and a half of filling in each using all of the filling. Wrap the filling in the dough. Make them larger if desired.
    Put about 3 C of fat in about a large pot, heated to 370 degrees F. Fry 1 1/2 to 2 minutes. Drain and serve. Makes about 45.
