    Spinach Cheese Pie with Feta and Dill

    List of Ingredients




    1 unbaked pie crust
    2 pkg chopped frozen spinach
    2 T olive oil
    1 chopped medium onion
    2 lrg scallion tops
    1/2 C parsley
    2 tsp dried dill
    4 eggs
    1/2 pound feta cheese
    1 C milk
    1 T cornstarch
    1/2 C Parmesan cheese

    Recipe



    Thaw and squeeze moisture from spinach. Saute the onions and parsley in olive oil. When onions become translucent, add spinach and dill. Cook 5 minutes. Set aside and cool. Beat eggs with a fork. Crumble or slice feta into small pieces and add to eggs. Mix cornstarch into milk and add the Parmesan, stir to combine all. Pour into pie shell, crimp edges and bake on lowest rack of oven at, 350 degrees F., 35-45 minutes.
