    1/4 C butter, divided
    3-3 1/2 pound chicken
    3 onions, chopped
    1 garlic clove, chopped
    2 strips bacon, cut in pieces
    1/2 C cider
    1 bouillon cube, dissolved in 1/2 C water
    1/4 tsp salt
    few sprigs parsley, chopped
    bay leaf
    3 medium onions, thinly sliced
    3 medium carrots, thinly sliced
    2 small turnips, thinly sliced
    1/2 C fresh peas

    Melt 1/2 the butter in a 10 inch square casserole. Add chicken, several pieces at a time and fry over moderate heat until golden. Set aside, place 2 finely chopped onions, garlic and bacon in a 2 1/2 quart casserole. Fry until onions are wilted, add cider, 1/4 cup bouillon, salt, pepper, parsley and bay leaf. Simmer a few minutes. Add chicken. Cover and bake at 325 degrees F. for 1 hour. Remove bay leaf.
    15 minutes before serving, melt butter in a small saucepan. Add onions, carrots and turnips and add peas along with 1/4 C of the chicken broth. cook, covered over low heat until tender.
    To serve, spoon vegetables over chicken.
