    3/4 c fresh lime juice
    1/4 c soy sauce
    3 T dark rum
    2 T minced garlic
    1 T grated fresh ginger
    3 1/2 lb chicken; cut into pieces
    2 c corn oil
    2 c all-purpose flour
    Lime wedges

    Recipe



    Mix the lime juice, soy sauce, rum, garlic, and ginger in a large ceramic or stainless steel bowl. Marinate the chicken in this mixture, in the refrigerator, for 24 hours. Bring the chicken to room temperature before frying it.

    Heat the corn oil to 375§F. Drain the chicken and shake it around in a brown paper bag filled with the flour. Fry the chicken in the hot oil, a few pieces at a time, for about 10 minutes on each side, or until golden brown.

    Drain the chicken on paper towels. Serve it with the lime wedges.

    Yield: 5 Servings
