Orange rice stuffed game hen

List of Ingredients
* 2 game hens
* 1 medium onion, chopped
* 1/4 C butter
* 1/2 pound crimini mushrooms
* 2 C chicken stock
* 1 C brown rice
* 1/3 C slivered almonds
* 1/3 C currants
* 1/2 tsp dried savory
* 1/2 tsp orange zest
* salt and pepper to taste
* frozen orange juice with pulp
Recipe
Saute onion and mushrooms in butter. Combine all but the orange juice. Bring chicken stock to a boil and add mixture. steam for 50 minutes to an hour. Cool.
Prepare game hens and stuff them with as much rice as will fit. Pour about 1/4 C of thawed, undiluted orange juice in cavity of birds over the rice and roast 45 minutes to an hour.
Any extra rice can be placed in the roasting pan or a heat proof dish and cooked with the birds.
