List of Ingredients
- 3 Tbutter
- 1/2 C chopped onion
- 3 garlic cloves, chopped
- 1/2 pound smoked sausage, cut in half inch pieces
- 1 C long grain rice
- 2 medium potatoes, in half inch cube
- 2 1/4 C chicken broth
- 1/2 C dry white wine
- 4 oz jar sliced pimientos with juice
- 1/2 tsp turmeric
- cayenne pepper
- 1/2 pound large shrimp, peled and deveined
- 1/2 C chopped cilantro,
Instructions
- Melt butter in a large saucepan over medium heat. Add sausage, saute until begining to brown. Add rice and stir to coat with pan juices. Mix in potatoes, broth,wine pimientos with juices and turmeric. Season with salt and pepper and cayenne. Bring to a boil, stir well, reduce heat to medium low, cover, cook until rice and potatoes are tender and liquid is absorbed. Mix in shrimp and cilantro. Cover and cook until shrimp are just cooked through. Garnish with cilantro sprigs.
