    Mexican Green rice 2

    Recipe Introduction

    There are countless variations to this recipe. Try using different rices, chilis or peppers. Tomatoes, broccoli, parsley or not. Cumin is a nice additive. Serves 4-6 as a side dish.

    List of Ingredients

    1 pound tomatillos, husked washed and coarsely chopped
    1 onion, coarsely chopped
    1 lrg garlic clove, pressed
    1/2 C fresh cilantro, chopped
    1/2 C fresh parsley
    1-1/2 C vegetable stock
    2 T oil
    1 C rice
    1 tsp salt

    Recipe

    combine the tomatillos, onion, garlic, cilantro,parsley and stock. puree the mixture until smooth then set aside.
    Heat the oil. Add the rice and salt and cook stirring constantly for 2-3 minutes.
    Add the tomatillo puree and stir to combine.
    Bring to a boil then cover and reduce heat to low.
    Cook until all liquid has been absorbed and the rice is tender about 25 minutes. Fluff with a fork. Serve hot as a side. Sprinkle with Cotija cheese. (parmesan).
