    Spanish Rice, Savory

    List of Ingredients


    • 1/4 pound sausage
    • 1 clove garlic, minced
    • 3 T olive oil
    • 1 large onion, chopped
    • 1 bell pepper, chopped
    • 2 large tomatoes, chopped
    • 1 C raw brown rice
    • 2 T chopped parsley
    • 1 C stock
    • Salt and pepper to taste
    • pinch saffron


    Instructions


    1. Heat oil in large skillet, crumble and brown the sausage and garlic.

    2. Add onion, bell pepper, and tomato and saute 3 minutes. Add the rice and parch until tan but not browned. Add parsley and stock. Season. Put it into a large casserole dish. Cover with foil and bake 35 minutes at 350 degrees F.
