Composed-Asparagus Salad

List of Ingredients
- 1 1/4 pounds thin asparagus, cut diagonally into 1 1/2 inch pieces
- 8 scallions, trimmed to include a little greens + 5 more, divided & minced
- 1 T oil
- 1/4 tsp minced ginger
- 1/2 C chicken broth
- 1 T rice vinegar
- 1 tsp soy sauce
- 1/2 tsp sugar
- black pepper if desired
- 1 tsp lemon juice
Instructions
- Steam asparagus and 8 scallions 5 minutes. Rinse under cold water to stop cooking.Drain and cool.
- Heat oil in small saucepan on medium high. Add ginger and stir until it begins to color. Add half the minced scallions and cook a few seconds. Add broth, vinegar, soy,sauce and sugar. Set aside.
- Just before serving, place remaining minced scallions in large bowl. Add steamed asparagus and scallions. Bring dressing to a boil over medium high for 30 seconds. Gradually stir in pepper and lemon juice. Toss with vegetables.
