    Composed-Asparagus Salad

    List of Ingredients


    • 1 1/4 pounds thin asparagus, cut diagonally into 1 1/2 inch pieces
    • 8 scallions, trimmed to include a little greens + 5 more, divided & minced
    • 1 T oil
    • 1/4 tsp minced ginger
    • 1/2 C chicken broth
    • 1 T rice vinegar
    • 1 tsp soy sauce
    • 1/2 tsp sugar
    • black pepper if desired
    • 1 tsp lemon juice


    Instructions


    1. Steam asparagus and 8 scallions 5 minutes. Rinse under cold water to stop cooking.Drain and cool.

    2. Heat oil in small saucepan on medium high. Add ginger and stir until it begins to color. Add half the minced scallions and cook a few seconds. Add broth, vinegar, soy,sauce and sugar. Set aside.

    3. Just before serving, place remaining minced scallions in large bowl. Add steamed asparagus and scallions. Bring dressing to a boil over medium high for 30 seconds. Gradually stir in pepper and lemon juice. Toss with vegetables.
