    5 potatoes
    2 T vinegar
    4 hard boiled eggs
    1 1/2 C chopped dill pickle
    1 C celery, diced
    1/4 C scallions
    3 T chopped parsley

    Dressing
    1 1/4 tsp dry mustard
    2 tsp flour
    1 T sugar
    pinch salt
    1/2 C vinegar
    1 beaten egg
    1/2 C cream, whipped
    salt and pepper to taste

    Boil the potatoes in their jackets in boiling salted water.
    Make the dressing. Mix sugar, mustard, salt and flour. Heat the 1/2 C vinegar and add gradually to the flour mixture, blending until smooth. Put the slightly beaten egg in a double boiler, add the vinegar mixture gradually. Keep water below boiling point. Simmer, stirring constantly, until thickened. Chill and blend in the whipped cream.
    When ready to assemble the salad, peel and cut up the potatoes. Pour the 2 T hot vinegar over them and let stand a few minutes while you mix the scallions, parsley, celery and pickle. Add these to the potatoes. Blend in the dressing and adjust seasonings. Mix and chill.
