    Composed Mediterranean Chicken quinoa salad

    List of Ingredients


    • 1 C chicken broth
    • 1/2 C quinoa
    • 2 C diced chicken breast
    • 1/2 C cooked garbanzo beans
    • 3 T chopped red onion
    • 1/2 C diced cucumber
    • 10 cherry tomatoes, cut in half
    • 1/4 C chopped, canned artichoke hearts
    • 4 T chopped fresh parsley
    • 2 T fresh lemon juice
    • 2 tsp red wine vinegar
    • 1 T olive oil
    • 2 cloves garlic, minced
    • sea salt and pepper to taste
    • 1/4 tsp dried oregano leaves.


    Instructions


    1. Bring chicken broth and quinoa to a boil in saucepan. Cover and reduce to a simmer. cook about 15 minutes, or until all liquid is absorbed. Set aside to cool.

    2. Combine chicken, beans and vegetables in large bowl. and stir in cooked quinoa and parsley.

    3. Combine lemon juice, vinegar, oil, garlic and seasonings to make dressing.

    4. Pour dresing into salad, stir to combine. Serve room temperature or chilled.
