    Sandwich, Hummus

    Recipe Introduction

    2 sandwiches.

    List of Ingredients

    1-2 cloves roasted garlic
    olive oil
    1 summer squash, thinly sliced
    1 orange, red or yellow bell pepper
    1 fresh tomato
    hummus
    Romain leaves from the heart of romain
    4 slices rustic bread, thickly sliced

    Recipe

    Thinly slice the summer squash, peppers and tomato. (to seed the tomato first, cut off a thin slice of the top, just down to the seed area, and stick your finger into the segments where the seeds are. Work your finger around in the pocket, gently so as not to damage the tomato. Turn it upside down and shake the seeds and liquid out. You can either grill the tomatoes or slice and serve them fresh on the sandwich.
    Drizzle oil over the vegetables and grill them until they are just cooked but still tender-crisp. Either toast the bread or place on the edge of the grill away from too much heat, to just warm the bread.
    Remove all from the grill. Brush the bread with olive oil, and brush 2 slices with roasted garlic. Spread the other 2 slices with a thick layer of hummus. Add the grilled vegetables and tomato (if not grilled) and top with romain leaves.

    Var: add some grated carrots on top of the hummus if desired. Perhaps with raisins also.
