SANDWICHES, DEPRESSION ERA, BEEF

Beef raisin
1 tsp melted butter
1/4 tsp salt
1 C ground peanuts
1 1/2 C ground raisins
1/2 C ground cold beef
mayonnaise dressing
Combine to a spreadable consistency. If desired use cream and vinegar in place of mayo
dressing.

Liver
1/2 pound cooked liver
4 T chili sauce
salt
pepper
1/2 C diced celery
2 T butter
Chop liver and combine with rest. season to taste. 1 T minced onion and 2 T chopped pickle may be used in place of chili sauce.

Tongue and chicken
arrange thin slices of beef tongue on buttered toast. Spread with mayonnaise. cover with slices of chicken breast. than another slice of toast. lettuce and tomato if desired.
