Creole Sauce

List of Ingredients
- 1 T oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 C thinly sliced mushrooms
- 1 garlic, minced
- 1 C celery, chopped
- 1 C okra sliced
- 2 C tomatoes, chopped
- 1/4 C broth
- 1 tsp lemon juice
- 1 bay leaf
- 1-2 T sugar
- 1 T minced parsley
- 4 whole cloves
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1 C Sauterne wine
Instructions
- In the oil, saute onions, bell pepper, mushrooms and garlic. add all but the Sauterne. Simmer 20-30 minutes. Remove from heat and cool 5 minutes. Add sauterne.
- If too thin add tomato paste. you can also add 2 tsp thyme and 1/4 tsp crushed sage if desired. Use for shrimp creole or on short ribs.
