    List of Ingredients


    • 1 T oil
    • 1 large onion, chopped
    • 1 bell pepper, chopped
    • 1 C thinly sliced mushrooms
    • 1 garlic, minced
    • 1 C celery, chopped
    • 1 C okra sliced
    • 2 C tomatoes, chopped
    • 1/4 C broth
    • 1 tsp lemon juice
    • 1 bay leaf
    • 1-2 T sugar
    • 1 T minced parsley
    • 4 whole cloves
    • 1/2 tsp chili powder
    • 1/2 tsp salt
    • 1 C Sauterne wine


    Instructions


    1. In the oil, saute onions, bell pepper, mushrooms and garlic. add all but the Sauterne. Simmer 20-30 minutes. Remove from heat and cool 5 minutes. Add sauterne.
    2. If too thin add tomato paste. you can also add 2 tsp thyme and 1/4 tsp crushed sage if desired. Use for shrimp creole or on short ribs.
