    1/4 C butter
    3/4 tsp mustard powder
    1 1/4 C milk
    2 hard boiled eggs, chopped
    2 T flour
    1/2 tsp salt
    dash pepper
    1 T chopped parsley

    Recipe



    Melt butter, stir in flour and seasonings. Add milk gradually stirring with a wire whisk, and cook until thick and smooth. Take some of the hot sauce and whisk into the eggs, invert the eggs into the pan of hot sauce. Add parsley.
    Serve with poached fish. Also good on vegetables.
