    1 egg yolk
    3/4 C heavy cream
    2 T Madeira wine
    few grains salt

    Beat egg white stiff, gradually add sugar, while beating constantly Add egg yolk, beaten until thick and lemon colored. Add cream beaten stiff and wine and salt
