    Either cutlets or fillets of cod, hake, bream or fresh haddock can be cooked in this manner. Wash and dry the fish and rub in a little salt and vinegar into the flesh. Lay the pieces in a large flat oven dish, brush with melted butter and then egg, and finally sprinkle thoroughly with a mixture of breadcrumbs and grated cheese. Pour a cupful of top milk [half and half] into the pan and bake in a warm oven until the fish is golden brown, basting several times during the process.This will only take about 20 minutes if the oven is hot and care should be taken not to over cook the fish. Serve with the sauce left in the pan, and if you have a few mushrooms to fry and add to the gravy, so much the better. A sprinkling of parsley is also good.
