    2 quarts rich broth from head cheese or from pork shoulder
    4 C pearl barley
    1 large onion
    1 pound pork liver
    1 bay leaf
    6 whole allspice
    1 tsp celery seed
    salt and pepper

    Recipe



    Boil liver whole, and when cool, grate and add to rest of ingredients. Boil slowly until barley is done, stirring frequently to prevent scorching. Add more water, if necessary. The mixture will be thick like mush when done. Pour in crock to set. Slice and fry in pork drippings.
