    Boil the potatoes in their skins. Peel and mash carefully. To 2 pints of potatoes add 1 ounce cold butter, a teaspoon of salt, a teaspoon of sugar and 1 egg yolk. Mix all well together. Whip the egg white until it is stiff and fold into the mixture. Shape into small balls and roll in brown crumbs and fry in hot fat until golden.
