    1/2 C rice
    1/2 C sugar
    1/8 tsp salt
    1 T cornstarch
    2 C milk, scalded
    3 egg yolks, well beaten
    1 T soft butter
    1 T lemon juice
    1/2 tsp grated lemon rind
    Meringue;
    2 egg whites, stiffly beaten
    1/2 C sugar, added slowly
    few drops lemon juice

    Recipe



    Steam rice in 1 C water until nearly tender.
    Combine cornstarch, salt, egg yolks, butter and lemon. Add milk gradually to egg mixture and combine with rice. Pour into a buttered casserole dish. Bake in moderate oven about 40 minutes. Stir a few times during baking. Remove from oven and spread with meringue, put in oven for a few minutes until lightly browned.
