    Votlimpa bread was made from the leavings or dregs of the beer making process or "Wort"
    You can use all three spices together or one or two as desired.

    List of Ingredients




    2 cakes compressed yeast
    2 T sugar
    1 qt beer leavings (Lacking that, use a good stout ale)
    10 C rye flour
    3-4 C white flour
    2 T salt
    2 C treacle or golden syrup
    4 orange peel
    1 T anise seed
    1 T caraway seed
    1 T fennel seed

    Recipe



    Dissolve yeast in small amount of water. Add sugar. Pour lukewarm leavings on rye flour mixed with enough white flour to make a soft dough. Add yeast and beat well. Add rest of flour and turn out on board. Knead until it is smooth and elastic. Let rise in warm place until double in bulk.
    Cut orange peel into small pieces and cook in water until tender. Add it and the slightly warmed syrup to the dough along with the anise, caraway and fennel. Knead until firm, adding more flour as necessary. Let rise again. Turn onto floured board and knead. Shape into 5 loaves and Place carefully in greased bread pans,let rise again until light. Brush top with warm water.
    Bake at 400 degrees for 10 minutes then decrease heat to 350 degrees F. and bake 35-45 minutes longer.
