    beet greens mold

    Use one and one half pounds of beet greens and steam them. Press dry on a sieve and chop up finely, season with salt and pepper and a little worcestershire sauce if desired. Press into a mold and chill several hours. Turn out and serve with slices of hard boiled egg.
