    List of Ingredients




    6-8 pounds of pork trimmings from the neck, shoulder, hams and backbone.
    2 C salt
    1 handful fresh black pepper
    1 tsp saltpeter
    1 handful brown sugar
    6 potatoes
    1/2 bottle of catsup
    2 eggs
    4 half eggshells full of water
    1 1/2 tsp baking powder
    flour

    Recipe



    Use lean meat, cut into 1 inch pieces, feed slowly into grinder, grind fine. Add the salt, pepper, saltpeter and brown sugar. Mix thoroughly. Make into 3 1/2 inch links.
    For bot boi, cook potatoes in salted water 20 minutes and add 12 sausages. Add catsup and a dash of pepper.
    Make the dough;
    Beat 2 eggs, add the water, pinch of salt and baking powder. Use enough flour to make a stiff dough. Roll out on floured board. Let stand 2 hours, then cut into strips or squares.
    Drop the dough dumpling fashion onto bot boi.Cook with lid on. After each addition of dough, add a little water and loosen dough, 1 piece from another, so it cooks evenly.
    Top with parsley sprigs and a dash of pepper. Cook until noodles are done.
