    Soup, Creamy Wild Rice

    List of Ingredients


    • 1/3 C Reese wild rice
    • 1 C water
    • 1/2 tsp salt
    • 1/2 C butter
    • 3/4 C chopped onion
    • 1 C finely chopped celery
    • 2 tsp salt
    • 1/4 tsp white pepper
    • 1/4 c flour
    • 5 C milk


    Instructions


    1. In saucepan, bring to a boil the water, wild rice and salt. Reduce heat and simmer 45 minutes or until tender.

    2. To prepare soup, melt butter, add onions and celery. cover and cook gently for 5 minutes until vegetables are tender.(avoid browning vegetables) Stir in 2 tsp salt, pepper and flour.

    3. Remove from heat and add milk, stirring until flour is well blended. Return to low heat. Cook, stirring constantly, until soup thickens. Add the cooked rice and simmer a few minutes to blend flavor. Serve hot garnished with chopped chives.
