    Soup, Lettuce with Croutons,

    Recipe Introduction

    Serves 6. Make garlic croutons using day old bread. Cube the bread, run garlic through the garlic press, melt butter. Add the garlic to the butter in a pan and heat to melt. Add the bread and spread out in one layer on a cookie sheet and toast in the oven until crispy. Set another cookie sheet over the first sheet and flip over. toast the other side of croutons.

    List of Ingredients

    4 C finely minced lettuce
    1 C water
    2 1/2 C chicken stock
    1/2 C cream
    1 T chopped onion
    1 T butter
    nutmeg
    salt
    pepper

    Recipe

    Cook lettuce until tender in the liquids. Saute onion in the butter and add. Add rest of ingredients and bring to a boil. Simmer 10-15 minutes. Serve with the croutons on the side.
