    Soup, Oriental Chicken

    List of Ingredients

    4 ribs celery
    6 carrots
    1 onion
    3 cloves garlic
    1/2 tsp thyme
    1 bay leaf
    12 black peppercorns
    4 pounds chicken backs or wings
    3 qts water
    1/2 inch piece ginger
    salt pepper
    4 oz soba noodles
    1 8oz can straw mushrooms
    2 oz snow peas
    6 scallions
    1/3 C chopped cilantro
    1 tsp soy sauce
    1/8 tsp cayenne
    1/4 tsp sesame oil

    Recipe

    Cut the celery and 4 carrots into 2 inch pieces. Quarter the onion and halve the garlic cloves and put in a large pot. Add thyme, bay leaf, peppercorns, chicken pieces and the water. Bring to a boil. Simmer 2 1/2 hours. Mince the ginger and add to the pot. cook 1/2 hour. Strain and season the broth with salt and pepper. Remove the chicken from the bones. Cut the remaining 2 carrots into thin strips. Cook the soba noodles in boiling salted water. Bring the stock to a simmer and add carrots and chicken. simmer 5 minutes. Drain and rinse mushrooms. Cut snow peas into strips and add both, along with pasta, to the soup. Simmer 2 minutes. Slice scallion tops. Just before serving, add sliced scallion tops, cilantro, soy sauce,cayenne and sesame oil. Season to taste with salt and pepper.
