    Posole Stew, American Lamb

    Serves: 8

    List of Ingredients

    2 lbs boneless American Lamb shoulder meat, fat trimmed and cut into 1-inch cubes
    1/3 cup all-purpose flour
    1 tsp each salt and pepper
    3 Tbsp olive oil, divided
    3 cups chicken broth
    3 C beef broth
    2 T rojo sofrito
    2 cans (15-3/4 oz each) hominy, drained
    1/8 cup chopped cilantro leaves

    Recipe

    In plastic bag, combine flour, salt and pepper. Add lamb cubes in batches and shake to coat.

    In 6-quart pan, heat 1 tablespoon oil over medium-high heat. Add lamb in batches and brown. Place browned lamb in bowl. Add more oil as needed.

    After all lamb has been browned return lamb to pan and add broth and remaining ingredients.

    Simmer for 45 minutes. Stir in hominy. Cover and simmer for 15 additional minutes. Stir in cilantro.

    Serve with warm tortillas or cornbread.
