    Serves 4-6.

    List of Ingredients




    2 pounds potatoes, cut in quarters
    3 cloves garlic, chopped
    1/2 tsp rosemary, stemmed
    1 tsp salt
    4 T olive oil
    1-2 jalapeno peppers, seed and chop (to taste)
    4-5 shallots, chopped
    1/2 tsp cumin
    1/4 tsp cinnamon
    salt
    3 C shredded Kale
    3 C shredded Chard
    1 bunch Italian flat leaf parsley
    1 leek
    4 scallion

    Recipe



    Combine potatoes, garlic, rosemary and 1/2 tsp salt and the cleaned and chopped leek in a large saucepan. Cover with water. Bring to a boil over medium high heat.

    reduce heat to medium low and simmer 15-20 minutes, or until tender. Skim off foam. Simmer over low heat.

    In a large pot, heat oil, peppers and shallots over medium high heat, cook, stirring, until barely soft, 4-5 minutes. Add spices and salt to taste. Add Kale and chard, cook 3-4 minutes, or until just wilted. Stir in vegetables and broth. Serve hot. Garnish with parsley and scallion.
