    You may need to cut this recipe in half. I made it while cooking in a commercial kitchen.

    List of Ingredients




    3/4 C raw Spanish peanuts, Process to smooth puree with-
    3/4 C peanut butter. Use some of the broth if necessary.
    2 T peanut oil
    1 good size onion, chopped
    6 C cubed sweet potatoes, cooked and pureed
    1 T ground cumin
    1/2 tsp pepper
    1/4 tsp salt (to taste)
    2 (15 oz) cans garbanzos, drained
    30 oz chicken broth, or 15 oz broth and-
    1 (15 oz) can coconut milk
    1 (28 oz) can whole tomatoes, undrained
    Parsley for garnish
    cayenne pepper to taste

    Recipe



    Saute the onions in the oil until transparent. Add cumin and remove from heat. Combine all and bring to heat. Garnish with chopped parsley and a pinch of cayenne.
