    Serves 6-8

    List of Ingredients




    2 pounds fresh tripe
    4 T butter
    2 onions, thinly sliced
    1 large clove garlic, minced
    1/4 C finely chopped ham
    6 tomatoes, peeled and coarsely chopped
    1 bell pepper, thinly sliced
    1/2 tsp thyme
    2 small bay leaves
    few grains cayenne

    Recipe



    Wash tripe in cold water and drain. Bring to a boil in water to cover, with 1 teaspoon salt, per quart. Reduce to a simmer, covered, for 5 hours, or until tender. Drain and cut into 2x1 1/2 inch strips. set aside
    Heat butter in heavy saucepan, add onion and garlic. Cook until golden. Add remaining ingredients and season to taste. Bring to boiling and cook 10 minutes, stirring occasionally. Add tripe. bring to a boil, cover and cook 10 minutes.
