    Chestnut and Sausage Dressing

    List of Ingredients




    1 qt bread crumbs
    1 T chopped parsley
    1 C chopped celery
    3 T chopped onion
    1-2 grated carrots
    1 pound spinach
    1/2 C grated Parmesan cheese
    2 eggs
    1/4 tsp thyme
    1/4 tsp sage
    1 clove garlic
    1 pinch allspice
    1 pinch cloves
    1 pinch cinnamon
    1 pinch nutmeg
    1/2 C mushrooms
    1/2 C chopped, cooked chestnuts
    1/4 pound pork sausage
    Gizzard, liver and heart

    Recipe



    Grind gizzard, liver and heart. Chop spice with the garlic finely. Add to the bread crumbs. Add mushrooms and chestnuts. Add salt and pepper to taste. Chop spinach fine and fry in about 2/3 C butter. Add this to the bread crumbs.with eggs and cheese. Mix well. Pan fry sausage well, breaking it into pieces with fork. Add celery, onion and carrots and fry until lightly browned. Add to bread mixture and mix thoroughly.
