Dressing for poultry

makes about 4 1/2 cups
List of Ingredients
3 C bread cubes (day old french bread)
1/3 C fried and chopped bacon
1/2 C chopped onion
1 T roasted garlic, mashed with a fork
1/4 C reconstituted ****ake mushrooms
1/2 C reserved water from mushrooms
1/2 C sliced celery
1 T finely minced parsley
1/2 tsp salt
1/4 tsp pepper
1 tsp poultry seasoning (see note)
1 egg, beaten
2 T dry sherry wineRecipe
Soak the mushrooms in lukewarm water to just cover. Place a small saucer over the bowl to weight down. Soak 10 minutes. Drain through a small sieve, pressing to remove excess water, reserving the water.
Prepare bread cubes, vegetables, etc....Beat the egg with the sherry. Chop the mushrooms very fine. Combine all.
Grease a bread pan with chicken or turkey fat. Press the dressing into pan, cover with foil, and bake half an hour. Remove foil and bake half an hour.
Poultry Seasoning:
Makes about 4 tablespoons.
1 tsp coarsely chopped rosemary
3/4 C dried crushed sage
1/2 tsp dried, crushed thyme
1/2 tsp dried, crushed oregano
1/4 tsp dried, onion flakes
1/4 tsp black, pepper
1/4 tsp dried, minced craisins
1/4 tsp dried, grated ginger
1/4 tsp dried, grated lemon peel
dash marjoram
pinch cloves
