    Shrove Tuesday buns, served as dessert after dinner on Tuesdays during lent. Served with coffee or milk flavored with vanilla or cinnamon.
    Makes 2 dozen.
    Preheat oven to 400 degrees F.

    List of Ingredients




    3 cakes compressed yeast
    2 C milk, scalded
    5 C flour
    2/3 C butter
    1 C sugar
    1 egg, beaten
    1 T ground almonds
    5 bitter almonds, ground
    10 cardamom seeds, ground

    Recipe



    Dissolve yeast in a little warm milk to which has been added 1 tsp sugar. Add cooled milk and yeast to the flour and work into a smooth dough. Cover bowl and set in a warm place to rise until double.
    Cream butter and sugar. Add eggs, ground almonds. Combine with dough mixing thoroughly. Add a little more flour, if necessary.
    Let rise until double. Turn out on floured board and knead until firm. Shape into round buns, brush with beaten egg and let rise until light.
    Bake in hot oven, 400 degrees F. for 15-20 minutes. Cool slowly to prevent shrinkage. Cut the top from each bun, fill with almond filling and a spoonful of whipped cream. Replace top and sprinkle with with powdered sugar.
    Almond filling;
    1/2 C ground almonds
    2 egg whites
    1 1/2 C powdered sugar
    1 T water
    Combine ingredients and mix to a smooth paste. Thin with a little cream if necessary.
