    Scarlet Runner Beans in Egg Sauce

    Slice and boil 2 pounds of runner beans. When ready drain and keep hot. Melt 2 tablespoons of butter, stir in 2 heaped tablespoons of flour. Cook gently for a few minutes, then add two cups of hot milk. Mix 1 egg with 2 spoonfuls of cream and pour the sauce over this, season and mix in the beans.
