    Eggplant Stuffed with oysters

    List of Ingredients

    2 pound eggplant
    1 pint oysters, drained
    1/4 C minced onion
    1 garlic clove minced
    2 T minced celery
    1/2 C butter
    1 C soft btead crumbs
    1/2 tsp thyme
    1/4 C minced parsley

    Recipe

    Halve eggplant lengthwise, scoop out, leaving 1/2 inch wall. Chop the removed eggplant and saute with the onion, garlic and celery in butter. Combine with rest of ingredients. Spoon into eggplant shells and bake in buttered dish at 375 degrees for 1/2 hour.
