    List of Ingredients




    1 pound fresh corn, cooked and cut off the cob
    4 oz green chilies, chopped
    butter
    1 1/2 C diced tomatoes
    1 T lime juice
    1/4 C finely chopped cilantro
    1/2 C grated queso seco para frier (or Parmesan)
    NOTE: you can also use medium cheddar if desired

    Recipe



    Fry the corn in butter in a large skillet until slightly browned and beginning to parch. Add the green chilies and fry for 2 minutes. Add the tomatoes, lime juice and cilantro. Cook until the liquid has evaporated. Turn off heat. sprinkle cheese on top, cover with a lid and let sit for 5 minutes, or until cheese has fairly well melted. (Parmesan won't melt as well as the other cheeses, but that is fine).
