Red Onion and Apricot Vinaigrette

List of Ingredients
1 C olive oil, (divided)
1/2 medium red onion, diced
1/2 C champagne vinegar
6 T diced, dried apricots
1/4 C granulated sugar
salt
pepper
Recipe
In medium saucpan, heat 1 tablespoon of the olive oil and saute onion until translucent, 3-2 minutes. Add the vinegar, apricots and sugar. Bring just to a boil. Remove from heat and cool.
Whisk in the remaining olive oil, and salt and pepper to taste. Adjust flavors to your liking.
