    Black Bean-Rice Wrap

    List of Ingredients

    1 C rice or quinoa
    1 can black beans, drain and rinse
    1 small garlic clove, pressed
    1 T lime juice
    1 T minced onion
    1/4 bunch cilantro leaves
    3/8 tsp ground cumin
    3/8 tsp salt
    1/4 tsp jalapeno

    Recipe

    Rinse the rice or quinoa (in a wire sieve)thoroughly in running cold water. Steam it in a saucepan with 2 C water for 20 minutes. (follow pkg directions for rice).
    Let cool.
    Prepare the black bean spread by running all of the next ingredients in a food processor to a puree.
    Lay out 6 wraps on the counter and spread an equal amount of the black bean spread on each wrap. Divide the quinoa into equal portions (about 6). and pile it in a single line up the center of the wraps. Fold up the bottom of the wrap to cover the filling (like a burrito), and roll it up from one side to the other. You can add mashed avocado before rolling if desired.
