    Cranberry-Orange White Chocolate Cookies

    Recipe Introduction


    These are really delicious! Crisp around the edges and soft and kind of chewy in the middle. These are NOT cakey. Although, after being stored in an airtight container overnight, they got quite soft. It's probably because of the cranberries. Next time I will try storing the leftovers in a single layer in a container w/o a tight fitting lid. I used unsalted butter; I used 1 cup white flour and 1/2 cup whole wheat pastry flour and will probably go half and half next time since I could not detect the ww pf at all; I used 1 tsp. or so Penzey's dried orange zest in place of the fresh zest (I rehydrated it in the orange juice); she suggested adding 1 cup of white chips but I only used 1/2 cup and it was just right. I think fresh zest would have been a tad better but the dried zest was a lot better than I thought it would be. Perfect to use in a pinch.

    List of Ingredients




    1/4 cup butter -- softened
    1/2 cup sugar
    1/2 packed cup packed brown sugar
    grated zest of 1 orange
    1 large egg white
    2 tablespoons orange juice
    1 tablespoon milk
    1 teaspoon vanilla
    1 1/2 cups flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 cup fresh or frozen cranberries -- coarsely chopped
    1/2 cup chopped white chocolate or white chocolate chips -- optional (1/2 to 1 cup)

    Recipe



    Preheat oven to 350 deg.

    In a large bowl, beat butter, sugars, and orange zest until light and fluffy. Add egg white, orange juice, milk and vanilla and beat until smooth.

    In a small bowl combine dry ingredients. Add to the sugar mixture and stir by hand until almost combined; add cranberries and white chocolate (if using) stir just until blended. Do not overmix.

    Drop spoonfuls of dough about 2" apart on a cookie sheet that has been sprayed w/ nonstick spray. Bake for 12-15 minutes, until golden around the edges but still soft in the middle. Transfer to a wire rack to cool.

    1 1/2 to 2 dozen cookies

    Per cookie w/o chips: 110.5 calories, 2.6 g. fat
    Add 2.8 g. fat per cookie if you add 1 cup of white chocolate chips
