    This is really good! For the spices, I used 3/4 t. cinnamon and 1/4 t. mace. Also, I used buttermilk in place of the skim. Oh, and I added a pinch of salt and next time might add a splash of vanilla.

    List of Ingredients




    1 3/4 cups all-purpose flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/2 tsp. ground nutmeg
    1 cup mashed bananas
    3/4 cup sugar
    1 large egg
    2 large egg whites
    1/4 cup canola oil
    1/4 cup skim milk
    1/2 cup butterscotch chips (can also use cinnamon or peanut butter chips)

    Recipe



    Combine flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl; set aside.

    In a mixing bowl, combine the mashed banans, sugar, egg, egg whites, and oil, blending well.

    Add the flour mixture alternately with the milk to the banana mixture. Stir in butterscotch chips.

    Pour into a 9x5x3 inch loaf pan coated with non-stick cooking spray. Bake at 350 F. for 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean (check it at 50 minutes).

    Cool about 15 minutes and invert onto a wire rack.
