    Pineapple Casserole

    I adapted this from a recipe I got off the internet.

    Recipe Introduction

    This is is one of my favorite recipes!! It's great served with ham or smoked pork chops. I like to serve this at Christmas and Easter.You can double, triple, or quadruple this recipe. Just put in a larger dish and bake a bit longer.

    List of Ingredients

    1 (20 oz.) can pineapple chunks in it's own juice (drain and keep juice)
    3 Tbs. flour
    1/3 cup sugar
    1/2 cup grated cheddar cheese, scant
    3 Tbs. melted butter (use real butter!), approx.
    3/4 - 1 c. crushed Ritz or Townhouse crackers (don't use the low-fat crackers)

    Recipe

    Preheat oven to 350. Combine flour, sugar and 3 T. pineapple juice.

    Add cheese and pineapple and stir.

    Spoon into small greased casserole dish.

    Mix cracker crumbs with the melted butter. Cover casserole with crumbs.

    Bake 25 minutes or until heated through and golden on top. I like to let it cool for just a bit before I serve it.

    Notes: I like to use real butter and Dole pineapple.
