Lamb with Spinach
2 lb lamb cut into large cubes
1 ½ lb spinach washed
1 onion finely chopped
2 cloves garlic chopped
2 tbs tomato puree
1 cup red wine
1 tsp sugar
1 tsp ground cinnamon
Fry lamb in the olive oil until browned. Don’t fry too many pieces all at once or they will boil rather than fry.
Add the onion and fry that for a few minutes then add the garlic and fry until softened.
Mix in the tomato puree, add the wine, sugar and cinnamon.
Mix very well, cover the meat with hot water or vegetable stock, cover and simmer for one hour.
Add the spinach, season well with salt and pepper.
Add the juice of one lemon and cook for 5 minutes.
Add in some fresh chopped parsley(flat leaf) and serve with rice.
