SILVER WHITE COCONUT CAKE

List of Ingredients
2 cups plus 2 Tbls. sifted self-rising flour
1 1/2 cups sugar
1/2 cup shortening
1 cup milk
1 1/2 tsp. vanilla
3 whole eggs or 4 egg whites unbeaten
Icing:
2- 12 oz. pkgs. frozen coconut, or the equvalent freshly grated,
NOT the sweetened Baker's Angelflake
2 cups sugar
1 cup sour cream.
Recipe
Heat oven to 350 degrees. Grease and flour 2 pans. Sift together flour
and sugar. Add shortening, milk and vanilla. Beat for two minutes on
medium speed. Add eggs, egg whites and beat two more minutes. Bake for
35 to 40 minutes.
When starting to bake, take out 2- 12 oz. pkgs. frozen coconut. Place in bowl and add 2 cups sugar and 1 cup sour cream. Mix well. Divide layers of cake with a string. or dental floss to make 4 layers. Turn cut cut side up and put icing on warm cake.
